Fall-inspired cinnamon rolls with pumpkin puree and eggnog for a seasonal twist.
Ingredients:
  • 0.5 cup eggnog
  • 0.125 cup butter
  • 0.125 cup pumpkin puree
  • 0.5 cup water
  • 4 cups all-purpose flour, or more as needed
  • 1 egg
  • 1.5 teaspoons active dry yeast
  • 0.5 cup dark brown sugar
  • 3 teaspoons ground cinnamon
  • 1.5 teaspoons ground nutmeg
  • 1 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 0.125 cup melted butter
  • 1 cup confectioners' sugar
  • 0.5 (8 ounce) package cream cheese, softened
  • 0.25 cup pumpkin puree
  • 0.25 teaspoon vanilla extract
  • 1.5 tablespoons eggnog
Instructions:
  • Heat 1/2 cup eggnog in a small saucepan over low heat until it bubbles, approximately 5 minutes. Remove from heat, then whisk in 1/8 cup butter and 1/8 cup pumpkin until fully melted. Let cool to lukewarm for about 5 minutes before proceeding.
  • In a large bowl, whisk together the cooled eggnog mixture, 1 cup of flour, white sugar, egg, yeast, and salt until well combined. Gradually mix in the remaining flour, 1 cup at a time, using an electric mixer, until the dough comes together. Turn the dough out onto a floured surface and knead for about 8 minutes until smooth and elastic.
  • Shape the dough into a 12x9-inch rectangle.
  • Mix together brown sugar, cinnamon, nutmeg, cloves, and allspice in a bowl. Spread melted butter on the dough and sprinkle with the brown sugar mixture. Roll up the dough into a log, sealing the seam with a bit of water.
  • Slice the roll into 12 pieces with a sharp knife or unflavored dental floss. Arrange the slices in a greased 9x13-inch baking pan. Cover and allow them to rise until nearly doubled in size, approximately 1 hour.
  • Preheat the oven to 375°F (190°C).
  • Bake until beautifully golden in the preheated oven for 20-25 minutes.
  • Combine confectioners' sugar, cream cheese, pumpkin, and vanilla in a bowl. Gradually mix in eggnog until frosting is spreadable. Frost warm cinnamon rolls.
