Indulge in these delightful pumpkin cream puffs for a cozy fall or winter dessert.
Ingredients:
  • 0.5 cup butter
  • 1 cup water
  • 1 pinch salt
  • 1 cup all-purpose flour
  • 4 eggs
  • 2 cups heavy cream
  • 0.5 cup confectioners' sugar, plus extra for dusting
  • 1.5 teaspoons pumpkin pie spice, or to taste, plus extra for dusting
  • 0.5 (15 ounce) can pumpkin puree
Instructions:
  • Preheat the oven to a toasty 425 degrees F (220 degrees C).
  • In a heavy saucepan, bring butter, water, and salt to a full rolling boil. Stir in flour vigorously until a ball forms. Transfer dough ball to a mixing bowl, then beat in eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  • Spoon tablespoons of dough onto an ungreased baking sheet and bake for 20-25 minutes until puffed and golden brown. Allow to cool before filling. Slice cream puffs horizontally with a serrated knife.
  • In an electric mixer's work bowl, whip cream until slightly thickened for about 1 minute. Slowly add confectioners' sugar and pumpkin pie spice, mixing until well combined. Continue mixing until cream forms soft peaks, about 3 minutes.
  • Gently fold 1/3 of the pumpkin purée into the whipped cream using a rubber spatula or wire whisk. Gradually incorporate the rest of the pumpkin purée with careful folding motions.
  • Fill each puff generously with 2 tablespoons of luscious pumpkin cream, then sprinkle with a sweet dusting of confectioners' sugar and a pinch of fragrant pumpkin pie spice for the perfect finishing touch. Store any extras in the refrigerator for later enjoyment.
