Pumpkin frittata

Kid-friendly pumpkin frittata - healthy, budget-friendly, and irresistible!
Ingredients:
  • 250g butternut pumpkin, peeled, thinly sliced
  • 6 eggs
  • 64.38 gm milk
  • 2 green onions, sliced
  • 125.00 ml grated tasty cheese
  • 1 garlic clove, crushed
  • 40.00 ml tasty cheese, grated, extra
Instructions:
  • Preheat your oven to 200C/180C fan-forced, then generously grease a 6cm-deep, 20cm-round cake pan and line both the base and sides with baking paper.
  • Place the pumpkin in the prepared pan. Whisk together eggs and milk in a bowl. Add onion, cheese, and garlic, then pour over the pumpkin in the pan. Sprinkle with extra cheese.
  • - Bake the frittata for 30 minutes until set, then cool in the pan for 5 minutes. - Gently flip the frittata, top-side up, onto a baking paper-lined tray and allow it to cool completely. - Cut the frittata into wedges and store in the fridge in an airtight container.
