Pumpkin fritter bites with garlic dip recipe

Delicious butternut pumpkin fritters with a creamy yoghurt batter and garlic dip.
Ingredients:
  • 300g piece kent pumpkin, peeled and deseeded
  • 1 ½ cups Greek Style Natural Yogurt
  • 75g (½ cup) self-raising flour
  • 6-8 sage leaves, thinly sliced
  • 40g finely grated parmesan
  • 60ml (¼ cup) extra virgin olive oil
  • 2 cloves garlic, finely grated
  • Finely grated rind of 1 lemon
Instructions:
  • Use the large grate on a box grater to grate the pumpkin. Transfer the grated pumpkin to a bowl and set aside.
  • In a bowl, mix together ½ cup of yogurt, an egg, flour, sage, and Parmesan. Stir in the pumpkin until well combined.
  • Heat oil in a small frying pan over medium heat. Spoon ½ tablespoon scoops of mixture into the hot oil once it's hot. Cook for 2 minutes until crisp and golden, then flip and cook for another minute. Drain on paper towel-lined plate and repeat with the rest of the mixture.
  • Make the sauce by mixing 1 cup of yogurt with garlic and lemon juice in a bowl, then season to taste.
  • Serve the bites alongside a flavorful garlic dip for dipping.
