Crispy pumpkin fritters with a touch of curry, perfect for fall snacking or a side dish.
Ingredients:
  • 1 cup pumpkin puree
  • 1 large egg, lightly beaten
  • 1 teaspoon salt
  • 4 cups vegetable oil for frying
Instructions:
  • In a large bowl, blend together pumpkin, flour, egg, baking powder, curry powder, and salt until the batter is smooth.
  • Warm the oil in a deep saucepan until it reaches 325 degrees F (165 degrees C).
  • Drop spoonfuls of batter into hot oil in batches. Fry until golden brown for approximately 2 minutes. Use a slotted spoon to transfer the fried items to a paper towel-lined plate. Serve while hot.
