Pumpkin Ginger Jam

Create a zesty fall jam by boiling pumpkin with sugar, lemon, and ginger for delicious pumpkin preserves.
Ingredients:
  • 2 pounds peeled and seeded pumpkin, cut into small cubes
  • 5.25 cups white sugar
  • 1 lemon, cut into wedges and seeded
  • 1 (2 inch) piece fresh ginger, peeled and grated
Instructions:
  • Combine the pumpkin and sugar in a saucepan, cover, and allow to rest for 8 hours to overnight.
  • Blend unpeeled lemon wedges in a food processor until smooth.
  • In a saucepan over high heat, combine the pumpkin and sugar mixture. Stir in lemon and ginger. Bring to a vigorous boil and cook, stirring often, until the pumpkin becomes translucent yet remains intact, approximately 30 minutes. Mash to your preferred consistency.
  • 1. Boil a large pot of water. Add jars and lids, boil for 5 minutes. Fill hot jars with pumpkin mixture, cover with lids, cool, refrigerate, and use within a month.
