Ingredients:

1 cup chopped pecans
0.5 gallon vanilla ice cream, softened
36 vanilla wafers

Instructions:

Combine pumpkin, sugar, salt, ginger, cinnamon, and nutmeg in a large bowl until fully mixed. Add pecans and gently fold in ice cream.
Place 18 cookies in a 9x13 inch dish or sealable plastic container. Top the cookies with half of the ice cream mixture. Repeat the layers. Freeze until firm.
