No-bake pumpkin pecan cheesecake pie - perfect holiday dessert mashup!
Ingredients:
  • 2 (8 ounce) packages reduced-fat cream cheese, softened
  • 0.75 cup white sugar
  • 1 (15 ounce) can pure pumpkin (such as Libby's®)
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon vanilla extract
  • 0.5 cup chopped pecans, divided
  • 1 (9 inch) prepared graham cracker crust
  • 0.5 cup whipped topping, or to taste
Instructions:
  • In a spacious mixing bowl, whip cream cheese and sugar until velvety and smooth. Add pumpkin, cinnamon, nutmeg, ginger, cloves, and vanilla extract to the cream cheese mixture. Continuously blend until smooth, ensuring to scrape the sides of the bowl.
  • Gently incorporate 1/3 cup of pecans into the pumpkin mixture, then spread it into the graham cracker crust. Sprinkle the rest of the pecans over the pumpkin layer, and cover the pie with plastic wrap.
  • Chill in the fridge until firm, about 4 hours.
  • Slice the pie into 8 equal portions and generously dollop each with a tablespoon of whipped topping.
