Ingredients:
  • 1 (15 ounce) can pumpkin puree
  • 0.5 cup skim milk
  • 1 (1 ounce) package instant sugar-free vanilla pudding mix
  • 1 teaspoon pumpkin pie spice
  • 1 (8 ounce) container frozen fat-free whipped topping, thawed
Instructions:
  • In a medium bowl, combine pumpkin purée, milk, and pudding mix. Add pumpkin pie spice, then gently fold in half of the whipped topping. Transfer the mixture to an 8-inch pie pan and top with the remaining whipped topping. Chill in the refrigerator until firm, approximately 1 hour.
