Transform pumpkin seeds into a delicious sweet and spicy snack after carving and baking pies.
Ingredients:
  • 1 cup raw cleaned pumpkin seeds (preferably from a sugar pumpkin)
  • 4 cups water
  • 4 teaspoons salt
  • 1 tablespoon unsalted butter
  • 1 tablespoon white sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.125 teaspoon ground cardamom
  • 1 tablespoon white sugar, or to taste
Instructions:
  • In a saucepan, combine pumpkin seeds with water and salt. Bring to a boil, then simmer for 10 minutes. Drain without rinsing, then pat dry with paper towels. Spread seeds out to dry for 30 minutes on a work surface or baking sheet.
  • Preheat the oven to a gentle 250 degrees F (120 degrees C) and prepare a baking sheet lined with aluminum foil.
  • In a large microwave-safe bowl, melt butter for about 1 minute. Add seeds and mix in 1 tablespoon sugar, cinnamon, ginger, nutmeg, cloves, and cardamom. Ensure seeds are thoroughly coated with the spice mixture. Spread seeds onto the prepared baking sheet in a single layer.
  • Bake in the preheated oven for 45 minutes to 1 hour, stirring several times until toasted and crunchy. Sprinkle toasted seeds with 1 tablespoon sugar, or to taste, and allow to cool before serving.
