Spiced pumpkin quinoa pancakes for a cozy breakfast anytime.
Ingredients:
  • 1.5 cups quinoa flour
  • 0.25 cup brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground ginger
  • 1.75 cups buttermilk
  • 1 cup pumpkin puree
  • 2 tablespoons vegetable oil
  • cooking spray
Instructions:
  • Combine the quinoa flour, brown sugar, baking soda, cinnamon, allspice, salt, and ginger in a large bowl, blending all the flavors together perfectly.
  • In a separate bowl, combine buttermilk, pumpkin puree, eggs, and oil. Pour this mixture over the quinoa flour and stir until just blended.
  • Heat a large nonstick skillet over medium heat and coat it with cooking spray. Pour 1/4 cup of batter into the skillet. Cook until bubbles form and edges are dry, about 3 to 4 minutes. Flip and cook until the center springs back when pressed, for about 2 to 3 minutes. Repeat with the rest of the batter.
