Whip up a flavorful pumpkin quinoa porridge in your Instant Pot for a nutritious and filling breakfast.
Ingredients:
  • 2 cups unsweetened almond milk
  • 1 cup quinoa, rinsed
  • 1 cup pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1 tablespoon vanilla extract
  • 2 tablespoons honey
Instructions:
  • In a multi-functional pressure cooker, mix together almond milk, quinoa, pumpkin puree, pumpkin pie spice, cinnamon, and salt until well combined.
  • Secure and seal the lid, then choose high pressure as per the manufacturer's guidelines. Set the timer for 1 minute and patiently wait 10 minutes for the pressure to build.
  • Follow the manufacturer's natural-release instructions for 10 minutes, then carefully quick-release the remaining pressure for about 1 minute. Unlock the lid and stir in the vanilla extract and honey.
  • Divide the quinoa evenly among 4 bowls and dress each to your liking.
