Impress your kids with cozy pumpkin soup for winter.
Ingredients:
  • 1 medium brown onion, chopped
  • 1kg butternut pumpkin, peeled, chopped
  • 765.00 gm chicken style liquid stock
  • 200g fresh cheese and vegetable mini ravioli pasta
  • 63.13 gm pure cream
  • Finely chopped fresh chives, to serve
Instructions:
  • In a large saucepan over medium-high heat, heat oil and sauté onion until softened, about 3 minutes. Add pumpkin, stock, and 1 cup of cold water. Cover and bring to a boil, then reduce heat to medium-low. Simmer partially covered for 15-20 minutes until pumpkin is tender. Remove from heat, uncover, and let it cool for 5 minutes before serving.
  • Puree the pumpkin mixture in batches until silky smooth. Return the soup to the pan over medium heat and bring it to a simmer. Add the pasta and cook for 3 minutes or until it's just tender. Stir in the cream and cook for 1 more minute until everything is heated through. Season with pepper, ladle into bowls, sprinkle with chives, and serve.
