Honey-sweetened pumpkin muffins with raisins and walnuts - a wholesome and satisfying snack for any time!
Ingredients:
  • 0.5 cup raisins
  • 1.5 cups whole wheat flour
  • 0.5 cup packed brown sugar
  • 1 teaspoon pumpkin pie spice
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.75 cup canned pumpkin puree
  • 0.5 cup honey
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 350°F (175°C). Grease or line a 12-cup muffin pan. Place raisins in a cup and cover with hot water to plump for a few minutes.
  • In a large bowl, combine whole wheat flour, brown sugar, pumpkin pie spice, baking powder, baking soda, and salt. Create a well in the center and add eggs, pumpkin, oil, and honey. Gently mix until dry ingredients are incorporated.
  • Remove any extra water from the raisins. Combine raisins and walnuts with the batter, then fill the muffin cups 2/3 full with the mixture.
  • Bake in the preheated oven for about 18 minutes until the tops bounce back when lightly touched. Allow the muffins to cool in the pan before removing.
