Pumpkin-Caramel Cannoli

Make quick and classy pumpkin cannoli with chocolate and toffee in just 20 minutes.
Ingredients:
  • 1 package (8 oz) cream cheese, softened
  • 3/4 cup powdered sugar
  • 3/4 cup canned pumpkin (not pumpkin pie mix)
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons miniature chocolate chips
  • 2 tablespoons toffee bits
  • 2 tablespoons finely chopped pecans or shelled pistachios
  • 1/2 cup heavy whipping cream
  • 12 purchased cannoli shells (from bakery section of most grocery stores)
  • Additional miniature chocolate chips, toffee bits and finely chopped pecans or shelled pistachios
  • 1/2 cup caramel topping
  • 1/2 cup whipped cream
Instructions:
  • In a large bowl, use an electric mixer to blend cream cheese, powdered sugar, pumpkin, and pumpkin pie spice until smooth. Then, fold in 2 tablespoons each of chocolate chips, toffee bits, and chopped pecans.
  • Whip heavy cream in a large bowl until stiff peaks form. Gently fold in the cream cheese mixture. Refrigerate the filling if not serving right away.
  • Transfer the filling into a sealable plastic bag. Cut off a bottom corner of the bag and pipe the filling into each cannoli shell. Finish by sprinkling the ends with extra chocolate chips, toffee bits, or pecans for added flavor and presentation.
  • Place the filled cannoli elegantly on plates. Drizzle with luxurious caramel topping and top with a dollop of whipped cream for a delightful finish.
