Celebrate Purim with sweet prune-filled hamantaschen cookies.
Ingredients:
  • 0.25 cup honey
  • 2 tablespoons lemon juice
  • 20 pitted prunes
  • water to cover
  • 2.5 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1.25 cups white sugar
  • 0.5 cup butter, softened
  • 0.5 cup shortening
  • 3 eggs
  • 0.25 cup orange juice
  • 1.5 teaspoons vanilla extract
Instructions:
  • In a small saucepan, mix honey, lemon juice, and prunes. Cover with water and bring to a boil. Simmer until prunes are soft, around 10 minutes. Remove from heat and let cool.
  • Preheat the oven to 350 degrees F (175 degrees C) and line 3 baking sheets with parchment paper.
  • In a bowl, mix together the flour, baking powder, and salt.
  • Cream together sugar, butter, and shortening until creamy using a wooden spoon. Mix in eggs until smooth. Add orange juice and vanilla extract. Fold in flour mixture until dough forms. Divide dough into 3 balls.
  • Roll one dough ball on a floured surface to 1/4-inch thickness using parchment paper under the rolling pin to prevent sticking. Cut dough into circles using a glass rim.
  • Add a generous 1/2 teaspoon of prune filling in the center of each dough circle. Gently pinch the edges together to seal the filling inside, creating delightful triangular pockets. Place the filled cookies onto a baking sheet and continue the process with the remaining dough balls.
  • Bake cookies in the preheated oven until they turn a light golden color, approximately 18 minutes.
