Delicious triangular cookies filled with jam, enjoyed during the festive Jewish holiday of Purim.
Ingredients:
  • 3 large eggs
  • 1 cup granulated sugar
  • 0.75 cup vegetable oil
  • 0.5 cup orange juice
  • 2.5 teaspoons vanilla extract
  • 5.5 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup fruit preserves, any flavor
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) and give those cookie sheets a little hug of grease.
  • In a large bowl, whisk together eggs and sugar until smooth and creamy using an electric mixer. Mix in oil, orange juice, and vanilla. Fold in flour and baking powder until a stiff dough forms, adding more flour if necessary.
  • Place the dough on a floured surface and roll it out to 1/2-inch thickness. Use a cookie cutter or the rim of a glass to cut out circles. Put them 2 inches apart on the cookie sheets. Fill the center of each circle with 1 to 2 teaspoons of preserves. Pinch the edges together to form three corners.
  • Bake in the preheated oven for 12 to 15 minutes until lightly browned. Then cool on the cookie sheets for 1 minute before transferring to a wire rack to cool completely.
