Easy hamantaschen cookies with customizable fillings, including traditional poppy seed.
Ingredients:
  • 2 cups all-purpose flour, or more as needed
  • 0.5 cup white sugar
  • 0.5 cup margarine, softened
  • 2 eggs, slightly beaten
  • 0.33333334326744 cup poppy seed filling, or as needed
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease 2 baking sheets.
  • In a large bowl, combine flour, sugar, and baking powder. Use 2 knives or a pastry blender to cut in margarine. Stir in eggs and vanilla extract until dough is smooth and comes together. Add more flour if needed to reduce stickiness.
  • Roll out dough on a dusted work surface to 1/4-inch thickness. Use the rim of a glass dipped in flour to cut out circles from the dough.
  • Spoon 1/2 teaspoon of filling onto the center of each circle. Fold the sides up to create a triangle shape, ensuring a tight seal. Place cookies on baking sheets.
  • Bake the cookies until they turn a beautiful golden brown color, approximately 25 minutes in the preheated oven.
