Indulge in the delectable Filipino delight, halayang ube, crafted from vibrant purple yams native to the Philippines.
Ingredients:
  • 1 pound purple yam root, unpeeled
  • 0.25 cup butter
  • 1 (10 ounce) can sweetened condensed milk
  • 0.25 teaspoon vanilla extract
  • 0.5 (12 fluid ounce) can evaporated milk
Instructions:
  • 1. Bring a large pot of water to a boil. Boil yam until tender, about 30 minutes. Drain, cool, peel, and grate the flesh thinly.
  • In a wok over medium heat, let the butter melt, then blend in the condensed milk and vanilla extract. Toss in the grated purple yam. Lower the heat and stir continuously until the mixture is sticky but still moist, for approximately 30 minutes. Add the evaporated milk, and continue cooking and stirring for 15 minutes. Remove from heat.
  • Place the yam mixture in a container and let it cool at room temperature for about 30 minutes. Refrigerate until ready to serve.
