Quebecois Maple Cream Pie

Indulgent Quebec sugar pie with rich maple syrup and plenty of cream for a taste of authentic French Canadian cuisine.
Ingredients:
  • 0.75 cup real maple syrup (dark amber)
  • 2.25 cups heavy cream
  • 4 egg yolks
  • 1 teaspoon distilled white vinegar
  • 1 (9 inch) pie shell, baked
Instructions:
  • Preheat the oven to 300 degrees F (150 degrees C) and place the pie crust in its plate in a large baking pan lined with foil to catch any spills.
  • In a heavy saucepan over medium heat, bring maple syrup to a boil and simmer for 5 to 7 minutes until reduced by one-quarter. Add cream, bring to a simmer, and then remove from heat.
  • In a large bowl, combine egg yolks and eggs, whisk together. Slowly incorporate the cream mixture into the eggs, adding 1/4 cup at a time while whisking continuously. Mix in salt, vanilla extract, and vinegar. Pour the batter into the pie crust.
  • Bake the pie for about 1 hour until it's mostly set but slightly jiggles when moved. Allow it to cool before serving.
