Spicy Mexican Bisquick® Cheesy Egg Quesadilla: Ready in 50 minutes.
Ingredients:
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles, drained
  • 2 cups shredded Monterey Jack or cheddar cheese (8 oz)
  • 1 cup Original Bisquick™ mix
  • 1 cup half-and-half
  • 1/8 teaspoon red pepper sauce, if desired
  • 4 eggs
  • 3/4 cup thick & chunky salsa
Instructions:
  • Preheat the oven to 375°F and generously coat a 9-inch square pan with cooking spray. Evenly distribute chiles and cheese in the pan.
  • In a medium bowl, use a wire whisk or fork to blend all remaining ingredients except salsa until well combined. Transfer mixture into the pan.
  • Bake for around 30 minutes until golden brown and a knife inserted in the center comes out clean. Allow it to rest for 10 minutes before cutting into 6 rows by 6 rows. Serve with salsa.
