Queso fresco sugar cookies: a unique twist on classic treat inspired by cream cheese recipes.
Ingredients:
  • 2.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 1.5 cups white sugar
  • 0.75 cup butter, at room temperature
  • 0.75 cup queso fresco, at room temperature
  • 1 egg
  • 1 tablespoon vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare 2 baking sheets by lining them with parchment paper.
  • In a large bowl, mix together the flour, baking soda, baking powder, and salt.
  • In a large bowl, cream together sugar, butter, and queso fresco until smooth. Add the egg and mix well. Stir in vanilla extract. Gradually add the flour mixture, 1 cup at a time, until a cohesive dough forms.
  • Roll the dough into tablespoon-sized balls and space them 1-inch apart on baking sheets.
  • Bake in the preheated oven for 9 to 11 minutes until firm. Allow to cool on the baking sheets for 2 minutes, then transfer to wire racks to cool completely.
