Easy and flavorful Mexican chicken baked with salsa and cheese. Perfect over rice or noodles for a quick dinner.
Ingredients:
  • cooking spray
  • 4 skinless, boneless chicken breasts
  • 1 pinch salt
  • 1 pinch ground black pepper
  • 1 pinch ground cumin
  • 1 cup salsa
Instructions:
  • Preheat your oven to 375°F (190°C).
  • Preheat a greased skillet over medium heat. Season chicken pieces with garlic, salt, pepper, and cumin to taste; transfer to the hot skillet. Sear until golden on both sides and fully cooked, about 10 to 15 minutes.
  • Place the chicken in a 9x13-inch baking dish, cover it with salsa and cheese, then bake in the preheated oven until the cheese is melted and golden brown, which should take about 15 to 20 minutes.
