Try these irresistible cheesy chicken pastry bites with just 6 ingredients - the perfect easy finger food.
Ingredients:
  • 1 1/2 sheets frozen puff pastry, just thawed
  • 1 small smoked chicken breast, finely chopped
  • 100g brie, cut into 24 even pieces
  • 100g (1/4 cup) cranberry sauce
  • 2 tsp fresh thyme leaves
  • 20.00 ml finely chopped fresh chives
Instructions:
  • Preheat your oven to 220C (200C fan forced).
  • For the pastry: Divide the whole pastry sheet into 16 squares and the half sheet into 8 squares. Line mini muffin pans (each with a 1 1/2 tablespoon or 30ml capacity) with the pastry squares, ensuring the edges sit higher than the muffin holes. Chill in the freezer for 15 minutes to firm up.
  • Bake the pastry until light golden and crisp, approximately 10 minutes. Gently press down on each pastry to slightly flatten. Fill each with a bit of chicken, top with brie and cranberry sauce, then sprinkle with thyme.
  • Bake until golden brown and cheese is slightly melted, then sprinkle with chives.
