Quick Cointreau, strawberry & chocolate mousse

Ingredients:
  • 250g (1 punnet) strawberries, hulled, sliced
  • 40mls (2 tbsp) Cointreau
  • 100g good-quality dark chocolate, chopped
  • 4 egg whites
  • 75g (1/3 cup) caster sugar
Instructions:
  • Toss the strawberries with Cointreau in a small bowl and let them marinate for 5 minutes.
  • While you wait, melt the chocolate in a small heatproof bowl over simmering water, stirring until smooth.
  • Beat egg whites in a medium mixing bowl with electric beaters until soft peaks form. Gradually add sugar and continue beating until mixture is thick, glossy, and sugar is dissolved.
  • Gently fold the melted chocolate into the fluffy egg whites until incorporated. Then, mix in half of the marinated strawberries by folding them in.
  • Distribute the mousse into serving bowls and garnish with the remaining strawberries and their juices.
