Raspberry meringue trifle

Make a delicious summer dessert by combining Cointreau-infused berries, creamy custard, and fluffy meringue.
Ingredients:
  • 2 x 125g punnets raspberries
  • 40.00 ml Cointreau liqueur
  • 250g pkt cream cheese, at room temperature
  • 250ml (1 cup) bought vanilla custard
  • 50g Petite Vanilla Meringues, coarsely crushed
Instructions:
  • In a bowl, mix the raspberries, Cointreau, and 1 tablespoon of sugar. Let it sit for 30 minutes to macerate.
  • Using an electric beater, blend the cream cheese, custard, and remaining sugar in a bowl until creamy.
  • Layer three-quarters of the raspberry mixture into the six 250ml (1-cup) serving glasses. Follow with a dollop of the cream cheese mixture and meringue. Finish by adding the rest of the raspberry mixture on top.
