Australian-themed trifle jar for a festive celebration.
Ingredients:
  • 85g packet blueberry jelly crystals
  • 4 lamingtons, cut into 1.5cm cubes
  • 85g packet raspberry jelly crystals
  • 480.00 gm double thick vanilla custard
  • 125g packet fresh raspberries
  • 600ml thickened cream, whipped
  • 1/2 x 100g packet mini vanilla meringues, roughly chopped
Instructions:
  • Chill blueberry jelly as per packet instructions until slightly thickened, about 1 hour.
  • Split the lamington into eight 1½ cup jars with lids. Top with blueberry jelly and chill for 1 hour until firm.
  • Prepare raspberry jelly according to package instructions, then chill in the refrigerator for 1 hour until slightly thickened.
  • Drizzle custard over the luscious blueberries. Spread raspberry jelly on top, then scatter fresh raspberries. Chill for 30 minutes until perfectly set.
  • Gently mix meringue into whipped cream. Spoon mixture evenly over trifles, cover with lids, and chill in the refrigerator. Serve when ready.
