Indulge in year-round peach cobbler bliss with this mouthwatering recipe.
Ingredients:
  • 60g butter, melted
  • 66.00 gm almond meal
  • 99.00 gm self-raising flour
  • 70.95 gm caster sugar
  • 41.20 gm milk
  • 1 egg, lightly beaten
  • 1 lemon, zested, juiced (2 tbsp)
  • 825g Brand Peach Slices in Syrup, drained, syrup reserved
  • 34.40 gm demerara sugar
  • Icing sugar, to serve
  • Ice cream, to serve
Instructions:
  • Preheat the oven to 180C (160C fan-forced), then use a touch of melted butter to brush four 1 1/2 cup baking dishes.
  • In a large bowl, mix almond meal, flour, and sugar. In a separate bowl, whisk together egg, milk, zest, juice, and remaining melted butter. Stir the wet mixture into the flour mixture until smooth.
  • Evenly distribute batter into dishes, top with peaches, drizzle with syrup, and sprinkle demerara sugar. Bake for 25-30 minutes until golden. Dust with icing sugar and serve with ice cream.
