Kids will enjoy making and eating these authentic Australian desserts.
Ingredients:
  • 2 egg whites
  • 100g (1/2 cup) caster sugar
  • 5 drops blue food colouring
  • 185ml (3/4 cup) thickened cream
  • 2.20 gm vanilla essence
  • 1 x 150g punnet blueberries
  • Icing sugar, to dust
Instructions:
  • Preheat the oven to 150°C and line 2 baking trays with non-stick baking paper. In a clean, dry bowl, whip the egg whites with an electric beater until soft peaks form. Gradually add the sugar, whisking continuously until sugar is dissolved and the mixture is thick and glossy, forming a long ribbon when the whisk is lifted. Swirl in the food coloring using a bamboo skewer.
  • Place six 8cm-diameter meringues on trays, shaping them with a spoon and creating a small indent on each. Bake for 40 minutes, switching trays halfway, until meringues are crisp and sound hollow when tapped. Turn off the oven and let meringues sit inside with the door slightly open for 2 hours to dry.
  • Whip cream and vanilla until soft peaks form using an electric beater. Top meringues with the cream mixture and blueberries, dust with icing sugar, and serve promptly.
