Apple and raspberry crumble: Bursting with juicy, flavor-packed goodness.
Ingredients:
  • 3 large red apples, peeled, cored, cut into 2cm pieces
  • 20.00 gm water
  • 1 x 300g pkt frozen raspberries
  • 40.00 gm caster sugar
  • 52.80 gm raspberry jam
  • 50g Petite Vanilla Meringues, coarsely broken
  • 55g (1/3 cup) dry-roasted hazelnuts, coarsely chopped
  • Double cream, to serve
Instructions:
  • In a large saucepan, combine the apple and water over medium heat. Bring to a gentle simmer, then lower the heat to cook for 10 minutes, stirring occasionally until the apple is soft.
  • Combine the raspberries, sugar, and jam in a pan, stirring well. Boil over medium-high heat, then allow to cool for 15 minutes before using.
  • In a large bowl, gently fold together the meringue and hazelnuts.
  • Spoon the raspberry mixture into six 250ml (1-cup) serving dishes. Add a dollop of the meringue on top. Serve promptly with a side of cream.
