Raspberry and meringue ice-cream puddings

Indulge in raspberry meringue clouds surrounding velvety ice cream for a decadent treat.
Ingredients:
  • 1 x 1L tub classic vanilla ice-cream (Connoisseur brand), softened slightly
  • 1 x 100g pkt petite vanilla meringues (Calais brand), roughly crushed
  • 300g fresh raspberries or thawed frozen raspberries
  • 12.00 gm icing sugar mixture
Instructions:
  • Line eight 185ml (3/4-cup) timbale moulds with plastic wrap and place them on a baking tray.
  • In a large bowl, combine the ice cream, meringue, and 200g of raspberries using a wooden spoon. Spoon the mixture into molds, cover with plastic wrap, and freeze for 6 hours until set.
  • Place the puddings onto serving plates. Garnish with the remaining raspberries and dust with icing sugar before serving.
