Raspberry-studded lemon sorbet and vanilla ice cream with fluffy meringue slices.
Ingredients:
  • 2L vanilla ice-cream, softened
  • 500g lemon sorbet, softened
  • 1 vanilla bean, split lengthways, seeds separated
  • 125g (1 cup) frozen raspberries, just thawed
  • 385g caster sugar
  • 4.40 gm vanilla essence
  • 150g (1 cup) self-raising flour
  • 160ml (2/3 cup) milk
  • 5 egg whites
  • 20.00 ml brandy, warmed
  • 100g Dairy Butter Spread
Instructions:
  • Prepare a 20cm (top measurement) 1.5L (6-cup) capacity pudding basin by lining it with 3 sheets of plastic wrap. Divide the ice-cream and sorbet into separate large bowls. Gently mix vanilla seeds into the ice-cream. Coarsely mash raspberries and gently fold into the sorbet. Combine the sorbet mixture into the ice-cream mixture then transfer everything into the pudding basin. Cover and freeze for at least 6 hours or overnight until set.
  • Preheat your oven to 180C. Grease a 20cm round cake pan with butter and line it with non-stick baking paper. In a bowl, cream together dairy spread and 100g (1/2 cup) caster sugar until pale and creamy. Mix in the egg and vanilla essence.
  • Alternate adding the flour and milk until the batter is just smooth. Transfer the mixture into the prepared pan and level the surface. Bake for 30-35 minutes or until a skewer comes out clean when inserted in the center. Allow it to cool completely in the pan before serving.
  • Preheat the oven to 200C. In a large bowl, use an electric beater to whip the egg whites until they form firm peaks. Gradually add the remaining sugar, one tablespoon at a time, while continuing to beat until the mixture is thick and glossy.
  • 1. Place the cake on a baking tray. 2. Invert the ice-cream mixture onto the cake, removing the plastic wrap. 3. Spread meringue over the entire surface. 4. Bake for 10-15 minutes or until lightly browned. 5. Carefully transfer to a serving plate using an egg lifter.
  • Pour the brandy into a heatproof jug and carefully ignite it with a long match. Drizzle the flaming brandy over the bombe alaska.
