Indulgent ice cream, fluffy meringue, and fresh raspberries make the ultimate sandwich fillings.
Ingredients:
  • 1 litre vanilla ice-cream
  • 300g frozen raspberries
  • 100g meringue nests, roughly crushed
  • 16 rectangular ice-cream wafers
Instructions:
  • Scoop the ice-cream into a bowl and let it sit for 5 minutes until slightly softened. Gently mix in raspberries and meringue.
  • Pack your delicious ice-cream mixture into a 3-liter airtight container. Seal it and let it freeze for 3 to 4 hours until it's nice and firm.
  • Place a generous scoop of ice-cream on a wafer, then sandwich it with another wafer. Repeat with the rest of the ice-cream and wafers. Serve and enjoy!
