Raspberry meringue tower recipe

Create a stunning Christmas dessert using Coles meringues and fresh raspberries for a showstopping centrepiece.
Ingredients:
  • 50g butter, softened
  • 120g icing sugar
  • 25g raspberries
  • 10 pink Fruity Meringues
  • 2 x 100g pkts Vanilla Kisses
  • Raspberries, extra, to decorate
  • Thyme sprigs, to decorate
Instructions:
  • Cut a 50cm circle from thin white cardboard. Slice the circle in half and form 1 half into a cone by trimming excess edges. Secure tightly with tape, and if preferred, staple the bottom for extra reinforcement.
  • Beat the butter in a small bowl with an electric mixer until pale and creamy. Gradually add the icing sugar in 3 batches, beating well after each addition. Mix in the raspberries until well combined.
  • Spread the fruity meringue bases with a touch of the raspberry mixture and wrap them around the cardboard cone.
  • Take 10 vanilla meringues and spread a bit of the raspberry mixture on each base. Sandwich with another 10 vanilla meringues. Use a bit of the raspberry mixture to attach them to the cone. Then attach the remaining vanilla meringues to the cone using a bit of the raspberry mixture, trimming if needed.
  • Adorn the cone with the additional raspberries using a touch of the leftover raspberry mixture. Garnish with sprigs of thyme.
