Ingredients:
  • 375g packet mixed dried fruit
  • 82.50 ml brandy, heated
  • 180g butter, softened
  • 135.00 gm brown sugar
  • 3 eggs, at room temperature
  • 150.00 gm gluten-free self-raising flour
  • 3.75 gm mixed spice
  • 100g packet almond meal
Instructions:
  • Mix the fruit with hot brandy, cover, and let it sit for 3 hours. Grease and line a 6cm deep, 10.5cm x 21cm (base) loaf pan.
  • Preheat the oven to 160°C. With an electric mixer, blend the butter and sugar for 4 to 5 minutes until they become pale and creamy. Incorporate the eggs one at a time, ensuring thorough mixing after each addition.
  • Combine the luscious butter mixture with the vibrant fruit mixture, ensuring a harmonious blend. Gently sift the flour and spice over the fruit mixture, then add the aromatic almond meal. Mix until all is impeccably combined. Lovingly spoon the mixture into the prepared pan, smoothing the surface for an elegant finish.
  • Bake for 1 hour 10 minutes, or until a skewer inserted into the center comes out clean. If cake is browning too much, cover with foil after 50 minutes. Cool completely in pan before slicing and serving.
