Savory beef and bean soup with seasoned rice and veggies - perfect for sharing with a crowd.
Ingredients:
  • 1 pound ground beef
  • 0.5 cup chopped onion
  • 1 (14.5 ounce) can no salt-added diced tomatoes with Italian herbs
  • 1 (15 ounce) can low-sodium Great Northern beans
  • 2 (32 ounce) cartons reduced-sodium beef broth
  • 1 (12 ounce) package frozen mixed vegetables
  • 1 teaspoon dried oregano
  • 1 (5.5 ounce) package Knorr® Rice Sides™ - Beef
Instructions:
  • Cook the ground beef and onions in a large pot over medium-high heat until the beef is cooked through and no longer pink, while breaking up any larger pieces of beef. Drain off any excess fat.
  • Combine tomatoes, beans, and broth in the pot, then bring to a lively simmer over medium-high heat. Once bubbling, introduce vegetables and rice, and return to a gentle simmer over medium heat.
  • Simmer until rice is tender and vegetables are heated, approximately 8 minutes.
