Elevate any dish with these zesty pickled radish bites – perfect for salads, tacos, bowls, sandwiches, and burgers, adding a delightful salty-sweet crunch!
Ingredients:
  • 1 cup distilled white vinegar
  • 1/2 cup granulated sugar
  • 2 bay leaves
  • 2 teaspoons pickling spice
  • 4 small sprigs fresh dill, divided
  • 4 bunches (about 2 pounds with leaves) radishes
Instructions:
  • Create 2/3 cup ice water: Fill a 1-cup liquid measuring cup with 3 to 4 ice cubes and cold water until it reaches 2/3 cup.
  • In a small saucepan, combine vinegar, sugar, salt, bay leaves, pickling spice, and 2 sprigs of dill. Bring the mixture to a boil, stirring for about 1 minute until the sugar completely dissolves.
  • Chill the brine: Take the pan off the heat and mix in the ice water and ice cubes. Allow it to cool until lukewarm.
  • Thinly slice the radishes using a mandoline or a sharp paring knife, then pack them into 2 (1-pint) jars.
  • Pour the flavorful brine and pickling spices over the radishes until fully submerged. Use tongs to gently remove the wilted dill before adding a fresh sprig to each jar.
  • Chill: Cover the jar tightly and refrigerate for a minimum of 12 hours before enjoying.
