Create a savory pumpkin cornbread using cornbread mix, pumpkin puree, and a hint of molasses. Ideal pairing for soups or chili.
Ingredients:
  • 3 cups cornbread mix
  • 1 cup water
  • 1 cup canned pumpkin puree
  • 1 egg
  • 2 tablespoons vegetable oil
  • 2 tablespoons white sugar
  • 2 tablespoons oat bran
  • 1 tablespoon molasses
  • 1 tablespoon vanilla extract
  • 1 tablespoon pumpkin pie spice
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 1 1/2-quart loaf pan.
  • Combine the cornbread mix, water, pumpkin puree, egg, oil, sugar, oat bran, molasses, vanilla, and pumpkin pie spice until well mixed. Transfer the mixture into the loaf pan.
  • Bake in the oven until a toothpick inserted in the center comes out clean, about 50-60 minutes.
