Whip up a delicious quinoa stir-fry in just 20 minutes for a quick dinner tonight.
Ingredients:
  • Lime wedges, to serve
  • 260g pkt Red Tractor Quick Cook Quinoa
  • 18.40 gm vegetable oil
  • 42.00 gm gluten-free soy sauce
  • 2 tsp sesame oil
  • 60g pea
  • 80g cabbage
  • 1 carrot, peeled, grated
  • 4 eggs, fried sunny side up
  • 200g Perino tomatoes, halved
  • 1 Lebanese cucumber, thinly sliced
  • Gluten-free soy sauce, extra, to serve
  • Spring onion curls, to serve
  • Dried chilli flakes, to serve (optional)
Instructions:
  • Cook the quinoa according to the instructions on the packet.
  • Heat the vegetable oil in a large deep frying pan over medium heat. Sauté the spring onion and garlic until aromatic, for about 1-2 minutes.
  • In a pan, combine quinoa, soy sauce, and sesame oil. Stir-fry for 3 minutes. Add peas, cabbage, and carrot. Stir-fry for an additional 3 minutes until heated through.
  • Spoon the quinoa mixture into individual serving bowls. Add fried eggs, tomato, and cucumber on top. Drizzle with extra soy sauce, sprinkle with spring onion curls and optional chili flakes. Serve with lime wedges.
