Decadent chocolate cake recipe that's a must-try!
Ingredients:
  • 270g (1 1/3 cups, firmly packed) brown sugar
  • 185ml (3/4 cup) milk
  • 125g butter, cubed
  • 50g (1/2 cup) cocoa powder
  • 0.63 gm Bicarbonate Soda
  • 40.00 ml plain flour
  • 3 eggs, lightly whisked
  • 195g (1 1/4 cups) pure icing sugar
  • 10.00 gm cocoa powder
  • 10g (2 tsp) butter, at room temperature
  • 20.00 gm boiling water
Instructions:
  • Preheat your oven to 160°C. Grease a deep, square 19cm cake pan with melted butter and line it with non-stick baking paper.
  • In a large saucepan, combine sugar, milk, and butter. Sift cocoa powder and bicarbonate of soda over the mixture using a fine sieve. Whisk over medium-low heat until smooth (avoid boiling). Let it cool for 5 minutes off the heat before using. (Check the notes for a microwave option.)
  • Sift half of both the self-raising and plain flours into the pan using a sieve. Whisk until smooth. Repeat with the rest of the flours. Stir in the eggs until well combined.
  • Transfer the mixture into the greased cake pan, gently tap the pan on a surface to remove any air bubbles. Bake in a preheated oven for 45-55 minutes until a skewer inserted in the middle comes out clean. Let it cool for 2 minutes before flipping onto a wire rack. Allow it to cool completely for 1 3/4 hours.
  • Sift icing sugar and cocoa powder into a medium bowl. Mix in butter and water until smooth. Spread the icing evenly over the cooled cake using a spoon or palette knife. Let it sit for 50 minutes until firm.
