Quince and mustard glazed ham

Indulge in a festive glazed ham for a merry holiday feast with loved ones.
Ingredients:
  • 4kg cooked half leg ham
  • 2 tsp whole cloves
  • 100g tub quince paste, roughly chopped
  • 54.00 gm maple syrup
  • 20.00 ml brandy
  • 2 tsp white wine vinegar
  • 11.80 gm wholegrain mustard, plus extra, to serve
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Cut the ham rind 8cm from the shank. Gently separate the rind from the fat using your thumb. Peel back and discard the rind. Score the fat diagonally at 3cm intervals to create a diamond pattern using a small knife. Be careful not to cut too deeply. Place one clove in the center of each diamond and wrap the shank end in foil.
  • In a small saucepan over gentle heat, combine quince paste, maple syrup, brandy, and vinegar. Stir continuously for 5 to 6 minutes until the mixture is smooth and the paste has melted. Remove from heat and stir in the mustard.
  • Place the ham on a wire rack in a roasting pan and add boiling water until it reaches 2cm up the sides of the pan. Brush the ham with half of the glaze and bake, basting with the remaining glaze every 15 minutes, until the ham is golden, typically 45 to 50 minutes. Serve with additional mustard on the side.
