Quince & nut crumble

Delicious quince crumble, perfect for holidays. Serve with yogurt for a crowd-pleasing dessert.
Ingredients:
  • 375ml (1 1/2 cups) water
  • 220g (1 cup) caster sugar
  • 1kg (about 2 large) quinces, peeled, quartered, cored, cut into 1cm-thick pieces
  • 3 slices day-old thick-sliced fruit loaf, torn
  • 50.00 ml flaked almonds
  • 50.00 ml chopped brazil nuts
  • 20.00 gm caster sugar, extra
  • 0.63 gm ground cinnamon
  • 10g (2 tsp) butter, melted
  • 1 200g container reduced-fat natural yoghurt, to serve
Instructions:
  • Preheat your oven to a toasty 180°C.
  • In a large flameproof ovenproof dish, mix together water, sugar, and cinnamon sticks. Stir gently over low heat until the sugar is completely dissolved.
  • Arrange the quinces in the dish, cover, and bake in a preheated oven for 2 hours or until they turn rosy pink and become tender. Take out of the oven, uncover, and let them cool slightly for 10 minutes before serving.
  • Next, pulse the bread pieces in a food processor until coarse crumbs form. Transfer them to a bowl. Combine with almonds, Brazil nuts, extra sugar, cinnamon, and melted butter, mixing thoroughly.
  • Strain quince pieces over a heatproof jug. Transfer them to a 1.25-litre (5-cup) ovenproof dish, pour 125ml (1/2 cup) of syrup on top, and discard the rest. Sprinkle with fruit loaf mixture. Bake until golden brown, about 15 minutes in preheated oven.
  • Garnish with yogurt before serving.
