Whip up homemade quince paste for a gourmet cheese platter.
Ingredients:
  • 4 (about 1.4kg) quinces, peeled, cored, coarsely chopped
  • 125ml (1/2 cup) water
  • 700g white sugar
  • Brie, to serve
  • Cheddar, to serve
  • Blue cheese, to serve
  • Wafers, to serve
Instructions:
  • In a large saucepan, let the quince and water mingle over high heat until they reach a boil. Lower the heat and gently simmer while covered, stirring from time to time, for about 30 minutes until the quince is tender.
  • Transfer the quince mixture into a food processor and blend until silky.
  • In a large, clean heavy-based saucepan, mix quince and sugar together. Cook on a simmer mat over low heat, stirring for 5 minutes until sugar dissolves. Simmer very low for 3 1/2 hours until mixture is ruby red, thick, and pulls away from the side of the pan. Allow to cool for 15 minutes before using.
  • Prepare six 125ml (1/2-cup) capacity ramekins by lining the bases and sides with plastic wrap. Divide the quince mixture evenly among the ramekins, smoothing the surfaces. Cover and let it set for 6 hours.
  • Invert one ramekin onto a serving platter. Save the extra paste in the refrigerator for later use. Enjoy with cheese and wafers.
