Port and quince glaze

Ingredients:
  • 40.00 ml ruby port
  • 100g quince paste
  • 1/2 tsp ground allspice
  • 45.00 gm dark brown sugar
  • 1 tsp of finely chopped rosemary
Instructions:
  • In a small saucepan, blend together 2 tablespoons of rich ruby port, 100g of sweet quince paste, and a hint of 1/2 teaspoon of aromatic ground allspice.
  • Stir consistently on medium heat until the mixture is silky.
  • Take off the heat and let it cool for a bit, then mix in 1/4 cup dark brown sugar and 1 teaspoon finely chopped rosemary. Use this flavorful mixture to generously brush over a leg of ham for a traditional holiday favorite.
