Mulled port with stilton & walnut biscuits

Finish your British dinner party with cozy mulled port and zesty cheese biscuits.
Ingredients:
  • 2 oranges
  • 500ml (2 cups) water
  • 55g (1/4 cup) caster sugar
  • 6 whole cloves, coarsely crushed
  • 1 cinnamon stick, coarsely crushed
  • 1/2 tsp ground allspice
  • 0.63 gm ground nutmeg
  • 750ml bottle port
  • 100g plain flour
  • 100g butter, chopped
  • 75g stilton or other blue cheese, crumbled
  • 25g (1/3 cup) finely grated parmesan
  • 45g (1/3 cup) walnut pieces
Instructions:
  • To make the biscuits, sieve the flour into a big bowl. Crumble the butter into the flour using your fingertips until it looks like fine breadcrumbs. Mix in the Stilton and Parmesan with a wooden spoon until well combined. Knead the mixture into a dough using your hands. Place the dough on a lightly floured surface, shape it into a 20cm-long log, wrap it in plastic, and chill in the fridge for 30 minutes.
  • Preheat the oven to 180C/160C fan forced and line a baking tray with baking paper. Using a sharp knife, slice the dough into twenty 3mm-thick rounds and place them on the tray with enough space between each. Press a walnut into the center of each biscuit. Bake for 10 minutes until golden, then cool on the tray for 5 minutes before transferring to a wire rack to cool completely.
  • Peel and slice 1 orange, then juice it. Combine orange juice, orange slices, water, sugar, cloves, cinnamon, allspice, and nutmeg in a saucepan over medium-low heat. Bring to a boil, stirring until sugar dissolves. Reduce heat and simmer for 10 minutes until fragrant. Stir in the port for 5 minutes until warmed (do not boil). Strain through a sieve into a jug. Serve the mulled port in small glasses with biscuits.
