Ingredients:
  • 10 whole cloves
  • 2 cinnamon sticks
  • 1 roughly grated nutmeg
  • 500.00 gm water
  • roughly grated rind of 1 orange
  • 1 apple, roughly chopped (skin on)
  • 750ml fruity red wine (such as a merlot)
Instructions:
  • In a large saucepan over medium heat, combine cloves, cinnamon, sugar, nutmeg, water, orange rind, and apple and bring to a gentle simmer.
  • Bring the mixture to a boil, then lower the heat and let it simmer gently for 10 minutes.
  • Pour in a generous splash of red wine and let it simmer for an additional 5 minutes. Take it off the heat, strain the mixture, and divide it among serving glasses. Serve promptly.
