Mulled wine pears

Upgrade your poached pears with a twist of mulled wine from Matt Preston.
Ingredients:
  • 750ml red wine
  • 220g raw sugar
  • 4 star anise
  • 2.50 gm ground cinnamon
  • 2 whole cloves
  • 57.20 gm honey
  • 4 beurre bosc pears, peeled, cored
  • Buche d'Affinois (triple cream brie), to serve
Instructions:
  • In a saucepan over medium heat, let the wine, sugar, spices, and honey mingle and come to a delightful boil. Stir and cook for 1-2 minutes until the sugar dissolves perfectly.
  • Place the pears in the pan and add enough water to cover them. Bring to a gentle simmer, then lay a piece of baking paper over the surface. Lower the heat and let the pears cook for 40 minutes until they are soft. Remove the pears from the pan and set them aside on a plate.
  • Turn up the heat to medium and simmer the syrup for 15 minutes, or until it thickens.
  • Drizzle warm pears with syrup and serve with chunks of brie.
