Transform fresh quince into a delectable liqueur by combining with sugar, lemon, and vodka. Opt for organic lemons for the best results.
Ingredients:
  • 2 pounds ripe quinces
  • 2 organic lemons
  • 1.5 quarts vodka
  • 1 pound white sugar
Instructions:
  • Thoroughly polish the quince with a kitchen towel until the skin feels smooth. Proceed to dice the unpeeled quince into small cubes.
  • Peel the lemon zest into beautiful spirals using a thin peeler, then squeeze enough lemons to get 3/4 cup of fresh lemon juice.
  • In a spacious jar with a secure lid, blend quince, lemon zest, lemon juice, vodka, and sugar ensuring all ingredients are fully submerged. Place in a warm spot or on a sunny windowsill for 4 weeks, shaking occasionally.
  • Prepare a sieve lined with a damp cheesecloth, then strain the liquid from the quince pieces. Use a wooden spoon to extract the liquid thoroughly. Transfer the strained quince liqueur into sterilized bottles and seal them. For optimal flavor, let it mature for 6 weeks in a cool spot.
