Quinoa salad with veggies, almonds, raisins, and herbs - a delicious and simple side dish.
Ingredients:
  • 0.5 cup quinoa, rinsed and drained
  • 1 cup cold water
  • 0.25 teaspoon salt
  • 3 tablespoons olive oil
  • 1 celery rib, chopped
  • 1 small onion, chopped
  • 1 carrot, chopped
  • 1 clove garlic, minced
  • 8 almonds, coarsely chopped
  • 1 small tomato, seeded and chopped
  • 2 tablespoons raisins
  • 0.125 teaspoon salt
  • 0.125 teaspoon ground black pepper
  • 0.125 teaspoon dried thyme
  • 0.125 teaspoon dried oregano
  • 1 pinch coarse sea salt
Instructions:
  • In a saucepan, bring quinoa, cold water, and salt to a boil. Reduce heat to medium-low, cover, and cook until liquid is fully absorbed, about 15 minutes.
  • In a skillet over medium heat, sauté celery, onion, carrot, and garlic in olive oil until onion is translucent, about 5-7 minutes. Add almonds, tomato, raisins, salt, pepper, thyme, and oregano; cook and stir for 1 minute.
  • Gently separate the quinoa grains with a fork and fold them into the skillet. Stir continuously until everything is well combined and heated through, which should take around 30 seconds.
  • Divide onto 3 plates and top each portion with a sprinkle of coarse sea salt for a delightful salty crunch.
