Start your day right with healthy almond milk quinoa porridge by MasterChef contestant Courtney Roulston.
Ingredients:
  • 300g quinoa
  • 625ml almond
  • 1.25 gm Brand Ground Cinnamon
  • 57.20 gm honey
  • 280g yoghurt
  • 125g fresh blueberries, or frozen blueberries
  • 62.50 ml pistachio nuts, chopped
  • Honey, extra, to serve
Instructions:
  • In a saucepan, combine quinoa, almond milk, cinnamon, honey, a pinch of salt, and bring to a gentle simmer over medium heat. Cook for 12-14 minutes, stirring occasionally, until quinoa is tender and most of the liquid is absorbed.
  • Spoon the porridge into 4 bowls, then swirl in a dollop of yogurt and sprinkle with blueberries, pistachios, and an extra drizzle of honey.
